This quick and easy pancake can be made ahead and kept in the fridge. It's the perfect way for the whole family to start the day!
Ingredients
1 egg
1 packet oatmeal - I use Low Sugar Maple Sugar
1 heaping Tbsp natural peanut butter
Instructions
Put oatmeal in blender and mix until it's a powder.*
Combine oatmeal "flour", egg and peanut butter until smooth. If batter seems too thick - add a few teaspoons of water.
Heat a large skillet over medium heat, and coat with cooking spray. Pour batter onto the skillet, and cook for approximately 1 minute. Flip with a spatula, and cook until browned on the other side.
Notes
* I have also made these pancake without putting the oatmeal in the blender. They turned out just as yummy. It just comes down to a texture difference and preference.
This recipe makes 1 large pancake or 2 small pancakes.
