Cookie Ice Cream Sandwich Recipe

Serves: 36 cookies
  • 2 sticks unsalted butter, softened at room temperature
  • ½ cup granulated sugar
  • 1 cup packed brown sugar
  • 1½ teaspoon pure vanilla extract
  • 2 large eggs, room temperature
  • 2½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups semi sweet chocolate chips
  • 3-4 choices of "add-on" topping for sides of ice cream sandwiches
  • Ice cream flavor of your choice
  1. Preheat oven to 375 degrees. Line cookie sheet with silicone baking mat or parchment paper.
  2. In a medium bowl, combine flour, baking soda, baking powder, and salt. Whisk dry ingredients together; set aside.
  3. In a large bowl, cream together butter and white and brown sugars. You can use a stand mixer with the paddle attachment or a hand-held mixer.
  4. Add vanilla and eggs (one at a time) and mix. Scrape down the sides of the bowl as needed.
  5. Turn the mixer down to low and slowly add the dry ingredients. Mix until the dough just comes together. Do not over mix.
  6. Finally, add in the chocolate chips and mix until incorporated. Place dough in refrigerator for 30-45 minutes to firm up a little bit more.
  7. Place heaping spoonful of cookie dough on the lined baking sheet. I used a tablespoon cookie scoop.
  8. Bake for 9-12 minutes (baking time varies depend on oven) until edges are a light golden color. Cool on baking sheet for a 5 minutes than transfer to cooling rack.
  9. Once completely cooled - assemble chocolate chip cookie ice cream sandwiches - see directions in below.
Chocolate Chip Cookie Ice Cream Sandwich Assembly:
Soft ice cream of choice on counter for 5-10 minutes.
Lay out a few paper towels on the counter and spread a layer of your add-on toppings across the sheet.
Place 2 scoops of softened ice cream on 1 cookie. Place a second cookie on top of ice cream and press down. Stop when ice cream starts to spread out the edges of the cookies.
Hold cookie in hand and roll the sides on ice cream sandwich in the add-ons, coating the side of the cookie ice cream sandwich.
Place coated cookie ice cream sandwich on baking sheet. Repeat this process with each of the different add-on toppings.
Once all cookie ice cream sandwiches have been made, place baking sheet in freezer for 10-15 minutes for everything to firm up.
Remove cookie ice cream sandwiches from freezer, wrap bottom half in paper towel and enjoy!
