Light and Crispy Paleo Waffle Recipe

Ingredients
  • 1⅓ cups brown rice flour
  • ⅔ cup tapioca starch
  • 4 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1¾ cups unsweetened almond milk
  • 2 eggs, separated
  • ⅓ cup ghee, melted
Instructions
  1. Preheat the waffle iron per manufacturer’s instructions.
  2. In a large bowl, combine all dry ingredients.
  3. In medium bowl, using a whisk or an electric mixture, beat the egg yolks, ghee and almond milk until foamy (about 1 minute).
  4. In a small bowl, beat the egg whites with an electric mixer until stiff peaks form. (Honestly, this step is ESSENTIAL to an amazing waffle no matter what your other ingredients may be...so be sure you don't skip it)
  5. Slowly, pour the milk mixture into the dry ingredients. Stir until just combined.
  6. Using a spatula or wooden spoon, gently fold the egg whites in the batter until all the white foam disappears.
  7. to cook your waffles, brush the waffle iron with ghee and pour about ¾-1 cup of batter per waffle.
  8. Close the iron and bake according to instructions.
  9. Remove and serve with maple syrup and ghee.
